Pumpkin & Yogurt Muffins

Recommended for toddlers (12 months and older)

Ingredients

Makes 6 small muffins
  • 1 tablespoon Baby Potage kabocha squash (kabocha)
  • 3.5oz (100g) all-purpose flour 
  • 1.8oz (50g) yogurt
  • 1 egg
  • 50ml milk
  • 0.4oz (10g) butter
  • 1/2 teaspoon brown sugar or coconut sugar
  • 0.14oz (4g) baking powder

Instructions

  1. Pre-heat oven to 360F
  2. Melt the butter
  3. Beat the eggs in a bowl, then add sugar, yogurt, milk, and melted butter, mixing well each time 
  4. Add flour, baking powder, Baby Potage kabocha squash and mix well
  5. Divide the mixture into 6 equal portions, pour into muffin tins, and bake in the oven for about 20 minutes
